Matteo Bianchi is a true dough artist and master of Italian flavors with over 15 years of experience. He began his pizza journey in a small family pizzeria and refined his skills in prestigious restaurants in Naples — the birthplace of authentic pizza.

Dough needs time to develop flavor and texture. Let it ferment for at least 24 hours in a cool place.

Preheat your oven to its maximum (ideally above 250°C) and use a pizza stone for the best results.

Don't overload your pizza with toppings. Focus on the quality of a few select ingredients.

Use type 00 flour, the standard for traditional Neapolitan pizza.
